Spices … View moreWe have a lovely wrap mix in stock that just requires water added. This mix is organic, gluten free and vegan. It is also nut free, dairy free, egg free and soy free. It makes a tasty soft and flexible wrap. The water can be replaced with vegetable juices for different colour and flavour. Spices such as cummin, or herbs such as parsley can be added to the mix for extra flavour as well. Once cooked, the wraps can be brushed with olive oil and sprinkled with salt then cut into wedges and baked in the oven until crisp for tasty chips. Alternatively, garlic butter can be used instead of oil and salt. I find that it is useful to keep a packet of the wrap mix in the pantry for when unexpected visitors arrive, so that I can produce quick and easy food that meets all dietary requirements.

1 1/3 cups dates
2 ripe bananas
4 tblsp cocoa
1 tblsp cinnamon
1 cup cooked black beans
1 cup walnuts pieces
1 cup dessicated coconut
Preheat oven 10 190C.
Chop dates and put in food processor with bananas. Process until creamy. Add cocoa, cinnamon, black beans, walnuts & coconut. Process again until mixture holds together.
Put into a rectangular tin with a removable base and bake for about 30 minutes. Cool on a rack for an hour.
