Here's my recipe for Pear & Rum cake:
1&1/2c sultanas
1c water
3c peeled and diced pears
1/2c marsala or rum (I’ve only ever used rum or masala – rum you can taste in the cake, marsala not so much)
1&1/2t baking soda
190g butter
1c and 3T sugar
2 large free range eggs
1t vanilla essence
2&1/2c plain white flour
1T baking powder
1t cinnamon
1t ginger
1t mixed spice
1t ground cloves
Bring the sultanas and water to a simmer, let them bubble away for 5 mins. Add the pears, baking soda and booze then turn off the heat, cover and leave to cool.
Cream the butter and sugar before adding the other ingredients.
Gently combine the wet with the dry and bake in a pre-heated 180 deg oven for approx 45 mins til cooked.
I line my baking tin but don’t think it’s critical, greasing it would be tho!
(No idea what size tin I use sorry, it's just "the pear cake tin"!) ;)
Serve dusted with icing sugar and with soft whipped cream as a dessert. Or cold with just the icing sugar dusting.
I have put pecans on the top of this before baking, that was a fab touch.
I have subbed in apples and they're good too!
This recipe never fails and even people who don't like pears or rum will scoff it happily.
PS If you wanted to share your fave recipe, I know I wouldn't complain - I am *that* person who tears a page out of a magazine with a recipe on it (well, not so much now, I tend to take a photo of it but before I had a cell phone you'd see me carefully watching everyone in the room to see if anyone could tell I was nicking off with the page I wanted) :-D

I would like to say a big thank you to everyone that has made a comment or suggestion on my post this week. It has been interesting reading all the replies and comments.
An overwhelming theme is that you all think my proposed mail is junk and I agree with that.
Some junk is not junk, like the community paper or the new world specials as not all people could replace paper with a smart device.
We talked about replacing junk with something else email based and that posed the question about how to opt in initially, but still, doesn't address the issue of those with out a computer. At this time we still need junk mail for our older people not using smart phones or pcs.
This morning I had a coffee meeting with Karl Jager and he was very inspiring to talk to. Karl is studying marketing at EIT. One of the suggestions Karl made I am using right now, an application called Grammarly that he uses. It checks grammar as you type, its free and pretty cool tool to use.
So, the future looks different from here. I promise no unsolicited junk mail in your letter box from me from today forward.
To answer some of my critics I have signed up as a premium business on neighborly. My personal posts will be here and business there.
To add value to the community I have some great ideas that you will see over the next few weeks. I will post on neighborly when and where you can see that offer.

In fact I got into a little hot water last time I talked about this..... However it has just come to my attention that there are sales people offering free carpet shampoos. The whole campaign is geared to getting into a persons home environment to sell a vacuum cleaner. You may well ask, Carol I thought you said this was a carpet shampoo! You would be correct as that is what my contact thought. Lo and behold that was not the intent, they did very badly want to sell a $4000 vacuum cleaner... Yes you read that right, a $4000 vacuum!
My contact is savvy but it still took some time to convince the sales person there was not going to be a sale. Our concern is that there are vulnerable people in our community who may well feel pressured into making a purchase they can ill afford or need. So please be aware and let other people know if there are concerns.

Went home with the dental floss they gave me (as they said maybe it was my floss at home that the problem), and their floss doesn't work either and I still can't floss ;between those two teeth. So I'm going to try Te whenua and Jan/Feb. Two (including the female dentist there) of the 3 ladies at Omahu Rd dental were consistantly friendly on my visits and even very understanding when I go the time wrong for one of the appointments.
