Lemongrass is one of those aromatic greens that seems to cope with being frozen so I always have some in the freezer ready to use. It will usually defrost within 10 minutes. It is important to massage your chicken with the lemongrass and oil. It may look a bit strange but this way, the flavour of the lemongrass will be absorbed.

It's also a place where individuals and groups can voice their opinion and/or raise concerns about what they feel need addressing. In some circumstances, MECOSS may then act as an advocate for change through Community Networks Aotearoa (CNA); a national organisation with strong links to government.

During 2020, MECOSS meetings will be held at venues in the Pakuranga and Howick area and the Botany and Flat Bush and Ormiston area of Auckland's, Manukau East.
