✨ Feijoa Fun in the Kitchen! ✨

I'm always experimenting with new ways to repurpose the fresh produce that is generously gifted to us, and this week it was all about feijoas!
After washing and top and tailing them, I cut them in half — skins and all—and popped them into a pot with a splash of water and a little sugar. Once they were stewed soft, I mashed them gently with a potato masher.

Then came the fun part: I grabbed my Edmonds Cook Book and used the banana loaf recipe, swapping the banana for the same amount of feijoa pulp.

The result? Absolutely delicious. Moist, flavourful, and that uniquely gritty feijoa texture we all secretly love! 😋
