Slice thinly. Salt and pepper and use in place of lasagne sheets. Layer with finely chopped vege, pasta sauce and cheese sauce and you have an awesome, tasty vegetarian lasagne. Or make zucchini fritters. Or sauté with garlic butter. Or use in stir fry.

Just use your imagination. They really are very versatile. And extremely under appreciated.
