I love experimenting with flavors, especially when it comes to repurposing rescued rhubarb! One of my favorite discoveries (though I probably canโt take credit for it) is how beautifully rhubarb and elderflower cordial come together in preserves.
Itโs so simple โ just adjust the ratios of rhubarb, elderflower cordial, and sugar to your taste. Cook it down, testing as you go. Youโll know itโs ready when you run your finger along the back of cooking spoon and the mixture stays separated on both sides.
