Spinach, Leek and Potato Soup (Recipe)
Ingredients
25 g Butter
2 Leeks, medium, trimmed, sliced and thoroughly washed
3 Floury potatoes, or all-purpose potatoes, medium, peeled and diced
1 Ltr Vegetable stock, or use chicken stock or water
1 pinch Ground nutmeg

Ingredients

3 Floury potatoes, or all-purpose potatoes, medium, peeled and diced
1 Ltr Vegetable stock, or use chicken stock or water
1 pinch Ground nutmeg
1 pinch Salt and freshly ground black pepper
500 g Spinach, washed, with tough stalks cut off
Melt the butter in a large, heavy saucepan and add the leeks. Cook gently for 5 minutes until the leeks start to collapse but are still pale.
Add the potato and cook gently for another 5 minutes or until the potato starts to stick to the bottom of the saucepan. Season with a pinch of nutmeg and salt and pepper, then add the stock.
Stir the soup while you bring it to the boil, then simmer until the vegetables are completely tender.

You are able to book appointments with your chosen doctor between 7.30am and 6.30pm Monday to Thursday, and between 7.30am and 5.30pm on Fridays. There are ‘on the day’ appointments available throughout each weekday, and on Saturday mornings. We are now closed Saturday afternoons, all day Sundays, and public holidays.
New patients and their families are welcome to enroll at Apollo Medical Centre.

8 slices White sandwich bread
50 g Butter
8 slices Bacon, rind removed
4 tsp Basil pesto, optional
2 Tomatoes, sliced
4 Eggs, whisked
1 to taste Salt and freshly ground black pepper
1 Ground black pepper
Preheat oven to 200C.
Cut crusts off the bread and spread butter on one side. Place a slice of bread butter-side down in eight muffin pans.

Ingredients
15 g Butter

500 g Carrots, peeled and thinly sliced

Ingredients
15 g Butter
1 Leek, white and light green parts only, thinly sliced
500 g Carrots, peeled and thinly sliced
2 tsp Thyme leaves
1 Ltr Vegetable stock
1 splash Cream, for finishing
Melt the butter in a heavy-based saucepan over low heat. Add the leek, cover the pan and cook until it begins to soften, about 10 minutes.
Add the carrots and thyme leaves with the vegetable stock. Season with sea salt flakes and black pepper. Cover and simmer until the carrots are very tender, 25-30 minutes.
Remove soup from the heat and leave to cool a little before blending to a puree.
Return the carrot soup to the saucepan and heat. Ladle into warmed soup bowls and drizzle a little cream over each bowl of soup.

Our new home won't fit our two massive couches either so they're up for grabs! Not only is it a two year old house with eight years Master Builders left that can be transferred, it's located on a large 773m2 north facing section. We will miss our awesome neighbours in this great street but a new job opportunity means more travel, so in order to retain quality family time we need to move back to the Shore.
