Choraiya bhaji (or Chowrai Bhaji, Chore Bhaji) is a nutritious, leafy green vegetable from the amaranth family, popular in Caribbean, Fijian, and Indian cuisines, often prepared by sautéing with onions, garlic, peppers, and sometimes tomatoes or eggplant, mashed into a soft, flavourful side dish served with roti or rice.
