Vegetable Zucchini Spread Recipe

* 2 medium Zucchini
* 2 Red Bell Peppers
* 3 large Tomatoes
* 1 Yellow onion
* 2 large Carrots
* 1/2 cup Ketchup
* Black Pepper to taste

* Salt to taste
* Olive or Avocado Oil

🍆Prepare all vegetables. They should be diced into roughly one inch cubes.
🥬Preheat dish with a little bit of oil. Add in onion and carrots to the dish, cook them until they soften.
🥒Add in bell peppers, tomatoes, zucchini and ketchup. Season with salt and pepper.
🍅Cook the veggies on low heat for roughly 60 minutes. Make sure to stir the mixture every few minutes.
🍽 The spread is best served cold. You can store the spread in a fridge for several weeks.

Sea Buckthorn is a berry-filled bush from Europe and Central Asia that has long been used in traditional medicine to prevent aging, promote heart health, and clear up the skin.

Modern science has proven many of these benefits to be true, along with many others. The high abundance of antioxidant chemicals, vitamins, and flavonoids make sea buckthorn a great health product.

Vitamins and Minerals:
A – helps to maintain healthy teeth and bones (found in the berries)
B12 – helps with energy production and forming red blood cells (berries)
C – promotes wound healing, healthy teeth and gums (berries)

Various sources claim that it originated in the Middle East and later spread out to the Balkan peninsula, North Africa and even India. Nowadays halva is much appreciated dessert in almost half of the Europe (if you add on Poland, Lithuania, Latvia, Ukraine and big part of Russia to the Balkan states). Nevertheless, the Middle East still offers the biggest variety of halva. But this sweet is more and more on demand in other countries, notably UK and US, because of the great beneficial properties.

In ancient times halva was made from dates and milk or from sesame seeds and honey. As the time passed, more variations of it were invented, more ingredients were tried, more complex ways of production were used. These days in different countries you may find a lot of quite similar and totally diverse kinds of halva (which may be called helva, halawa, chalva, halwa, halvah, chałwa, alva, haleweh, halava, helava, halua, aluva etc). But in fact there are two main types of halva: flour based and nut based. The most common to Europeans is the latter one, made from crushed sesame or sunflower seeds, sugar syrup and flavors. Very often the extra ingredients like nuts, cocoa, dried fruits or even chocolate are added to it. I noticed that halva is a little bit varied in every country. So there‘s much to explore, if you like this sweet.

You may also call it the oldest food supplement in the world, as halva contains a lot of essential minerals, fatty acids, dietary fiber, proteins, aminoacids and other useful elements. Salted herring completes the salted and canned goods quartet that is often used in Russian cuisine. The other three being canned goby fish, salted sprats and smoked mackerel.
Salted, smoked herring or herring in oil traditionally serves with boiled potatoes, chopped chives and crisp dark rye bread.
Also you can prepare special salad, calls "Herring under a Fur Coat". It is a traditional layered salad made of finely chopped pickled herring, eggs, beets, carrots, potatoes and some type of dressing, either mayonnaise or a sour cream base.
Make sure to prepare this salad at least 6 hours in advance so it can be chilled properly and sliced to show off the layers. This pretty salad can be a meat-free meal, side dish or served on a buffet table with other salads.

Ingredients
* 3 large potatoes boiled in their jackets (cooled, peeled, and finely chopped or shredded)
* 4 large unpeeled carrots (boiled, cooled, peeled, and finely chopped or shredded)
* 3 large beets boiled in their skins (cooled, peeled, and finely chopped or shredded)
* 1 1/2 cups mayonnaise
* 1 medium or large (depending on taste) red or yellow onion (finely chopped)
* 4 fillets of pickled herring in oil (finely chopped)
* 4 large hard-cooked eggs (finely chopped)
* Black pepper to taste
* Garnish: parsley or dill

Steps to Make It
1. Gather the ingredients.
2. In the same large saucepan, boil 3 large potatoes in their jackets, 4 large unpeeled carrots, and 3 large beets until tender. The carrots will take about 15 to 20 minutes, the potatoes will take about 40 minutes and the beets will take 1 hour or more. Just remove the vegetables that become tender but not mushy and continue cooking the rest.
3. Peel while still warm, cool completely and shred the carrots and beets and finely chop the potatoes.
4. Place a ring mold or the ring from a springform pan on a pretty serving platter. This also can be assembled free form in a round or oval shape or in a 13x9-inch pan.
5. First place the entire portion of chopped potatoes on the bottom, patting into an even layer. Spread 1/3 of the mayonnaise on top to completely cover the potatoes.
6. Place 1/2 of the beets, then 1/2 of the carrots and 1/2 of the finely chopped onion, all of the chopped pickled herring, and 1/3 of the mayonnaise.
7. Then layer the remainder of the onion and carrots, all of the chopped eggs and black pepper to taste, the remainder of the mayonnaise, and the remainder of the beets and pack down.
8. Refrigerate for at least 6 hours before serving
9. Enjoy!
